Cookie Magic easter biscuits...

Check out these babies chilling in the sun.... My slave driver of a little sister is insisting the good for our easter dessert bar at the weekend. The colour scheme is yellow and green and she has even made a mood board. I made these cookies and then had fun decorating them with royal icing. The recipe (from Cookie Magic) is listed below so you can give them a go over the bank holiday:- Basic Butter Biscuit 250g / generous 1 cup softened butter 140 g icing sugar sifted 1 tsp vanilla extract 1 large free-range egg yolk 375g / 2 3/4 cup plain flour 1) Beat butter and sugar together until very pale and fluffy 2) Add vanilla and egg yolk and mix well 3) Sift in flour and mix until it forms a firm dough. You may need to get your hands in and form it into a ball. 4) Wrap in cling film and chill for an hour (I didn't and it was fine!) 5) Preheat oven to 190 degrees / 375f and place cut shapes onto a silicone liner (I just brought some and they are a dream) 6) Bake for 10-12 mins until they are pale golden. Then transfer to a wire rack. 7) Put a few drops of food colouring on prebrought regal icing and then roll out and punch the same shape. Place a smartie or chocolate button in the middle. 8) Step back and admire and then devour. Enjoy!
